Today marks day one of going towards a healthier lifestyle – specifically by following a Keto lifestyle. I made some delicious and flavorful eggs and vegetables this morning and just had to show you all a quick recipe since I got some great feedback from showing it on my Instagram Story!
This would be a great meal to make even if you don’t follow a Keto lifestyle! It’s jam packed with healthy fats, proteins, and is low in calories!
No joke – I entered this into My Fitness Pal and was surprised to see this scrumptious breakfast only had 275 calories! I can totally get used to this!
Now if you know me – I love my food to be full of flavor so if you’re not into that, just skip the spices and add whatever you prefer! Also, you won’t find any fancy cooking with me. Most of the time I just throw together a bunch of vegetables with spices and my choice of meat and voila!
For today’s breakfast – I used eggs, mushrooms, onions, spinach, avocado, and eggs. Spices and oils I used are avocado oil, sea salt, red chili pepper, garam masala and turmeric.
PS: I used one scrambled egg and one boiled egg because I ran out of regular eggs *face palm*. Nevertheless, it tasted just as good with one of each!
- 2 eggs
- 1/4 cup spinach
- 1/4 cup sliced mushrooms
- 1/4 cup chopped onions
- 1/2 avocado
- 1 tbsp avocado oil
- 1 tsp red chili pepper
- 1/2 tsp sea salt
- 1/4 tsp turmeric
- A pinch of garam masala
- Heat a frying pan with about one tbsp avocado oil.
- Rinsed all the veggies and add them plus the spices to the frying pan and sautée them for about 3 minutes.
- Add in 2 eggs to the veggies and scramble them.
- You’re done! Place the finished eggs and veggies in your place and slice half an avocado next to them and enjoy!
If you’re looking to add in or substitute some of the ingredients, I recommend trying tomatoes, bell peppers, bacon, green onions, and cheddar cheese!
